The production process of dehydrated sweet potato.

Dehydration differs from general drying in that it removes only the water from the food, affecting as little as possible the nature or quantity of other ingredients. Therefore, dehydrated sweet potatoes are substantially similar in properties and composition to fresh sweet potatoes after rehydration.

2. Key points of process operation:
1. Raw material pretreatment: choose fresh, mildew-free, pest-free, black-spotted potato chips, and wash the sediment by hand or machine. Decide whether to peel according to your needs. If you need to peel, you can use hand or 2% sodium hydroxide to etch and peel, and rinse with water. It is then cut into desired shapes such as slices, squares, filaments, etc. If it is square, the volume should be less than 1 cubic centimeter, otherwise the drying time will be longer.
2Blanching: Put the cut raw materials into boiling water or steam for 1-2 minutes, according to the shape and size of the raw materials, appropriately increase or decrease the boiling time, so that the surface has a maturity of seven or eight. Its purpose is to destroy the enzymes (especially oxidase) in the body, inhibit its function, so that the sweet potato will not change color during the drying process, and also reduce the loss of some vitamins and accelerate the drying. Boiled sweet potatoes should be used as raw materials for cooked food, not starch.
3 Sulfur treatment: Soak the scalded sweet potato material in 0.2% sodium sulfite solution for 1-2 minutes, or fumigate in a sulfur room (burning sulfur) for 1-2 hours, so that a certain amount of sulfite is adsorbed on the surface. It can prevent oxidation in the drying process, keep the product bright, reduce the loss of vitamins, and accelerate drying.

4. Drying: Various forms of drying rooms can be used, the temperature is preferably 65-70 degrees Celsius, and there are ventilation and moisture removal devices. Generally, sweet potato chips with a thickness of 1 cm are baked under hot air at 70 degrees Celsius, and can be dried to about 10% of the water content in about 6 hours.
